Procrastination

Last week the aunt gave us six cases of persimmons. (Yes, a thoughtful gift for people who have two persimmon trees of their own.) The aunt likes to pick her persimmons before they ripen and then wait for them to mature, one by one. In the past, this has meant that her gifts of persimmons have never been very useful to us. (I mean, aside of the obvious fact of our not needing them because we have our own.) I don't like persimmons enough to eat several cases of them in the space of a month, N doesn't like them at all, and the thought of giving a ripe persimmon to Pata, who has yet to perfect her technique with a spoon, makes me shudder. All that is left is to cook or bake with them, but when only two or three are ripe at a time, it limits the possibilities.
This year something different has happened. All of them ripened within one week, too many persimmons to bake into cakes, even for someone who likes cakes as much as I do. This surfeit of persimmons reminds me of the time when N and I used to pick our own, already ripe, and more flavorful than those of the aunt, before her insistent gifts of them made ours redundant. If the fifty tiny wet-waste bags allotted by the comune every three months were any larger, I think I would just toss all the aunt's persimmons, out of spite.
Somehow this week I realized that persimmon pulp can be frozen. And that's a bit of what I've been doing lately, making persimmon pulp and freezing it so that I can use it later when I have the time or inclination. I hope you have enough freezer space! We have similar problems with apples and pears. Too much of a good thing is never good.
I have never tried persimmons before, and am now curious about their taste. And don't worry, you are not the only one guilty of procrastination. Lately, I've been really guilty of it, but then again I've been working on a series of posts for next month. :)

I like persimmons, but 2 trees, let alone 6 cases would be too much for me. Now figs, that would be another story. I love, love, love figs.
What are you going to do with the persimmon pulp besides freezing it?

Catherine, I don't think they don't have very much flavor, actually- they're just sweet. Does that make any sense at all?

J.Doe, I'm in complete agreement about the figs. I'm not sure what I'm going to make yet- certainly a couple of cakes, maybe some ice cream, maybe a glaze for a cheesecake as Judith suggested above.
This post made me laugh. Sad that persimmons are not flavorful. I have a friend over here that loves them so some people think they are great. I can't say that I have ever tried them. Myself, I have been elbow deep in tomatoes. I've been drying them and eating them and today made some stewed tomatoes to freeze for later (I will seal them in some of those vacuum sealed bags that store so well). I do love harvest time.
I can't get over the color of the pulp- beautiful. You must be drowning in persimmons now, but you'll be loving that freezer stash in a couple of months!
My landlord loves to bring me cases of fruits and veggies - and using them up is always a challenge (sometimes unmet...) He and I together picked 4 cases of peaches and white plums this year in one batch - that was tough! My tiny freezer couldn't hold all of it. I do like to use the pulp for yogurt smoothies: some plain greek yogurt, a little milk, and the frozen pulp. Makes a great drink. Looking forward to trying the persimmon cake you posted awhile back now that they're in season again.
Frozen persimmon pulp sounds like an excellent gift for AIL.... especially if you left it on her dorrstep to defrost. ha ha ha. Vanessa

Cachi - yuck. I don't like them, but my husband adores them. We have one tree, and it gives more than enough. Receiving unwanted food gifts - always a problem...
